American bison hanger steak (diaphragmatic crura). Sous vide to 125F for 4 hrs. Salt, pepper, and seared in cast iron with 🧈. Rest. I made a chimichurri to go with it but the meat tasted so good on its own I barely used it. “Dad, can you get more bison?”. 😊
