Browser support is basically solved. caniuse has WebP at 97.08% and AVIF at 96.33%.
Small gap. Not zero. Serve AVIF with no fallback and older Safari users get a broken image.
And WordPress core won't convert your JPEGs to AVIF on its own.

Gray boxes in your Media Library almost never mean lost files.
WordPress usually knows about the images. The browser can't reach them, the grid request is failing, the files were never catalogued, or your posts still hold old URLs.
